With Americans eating less red meat, the industry sought ways to cut costs including moving plants to smaller Prairie-state cities. This has brought a shift in the cities’ make-up. Select a state. Each dot represents a community with a big plant. The tabs shows the percentage of each town employed at the plants, the change in wages, population make-up and the impact on high school graduation rates.
